Background info: My friend Yanli gave me this recipe last Christmas, as well as a jar of saffron. I cooked it with John S., a friend and much more confident cook than I. We all loved it, with some rice in the stew. I didn't dare to cook it without John, because I was afraid it won't come out the same (great taste). Thousands of dead fish reported at mouth of Mississippi Thousands of fish have turned up dead at the mouth of Mississippi River, prompting authorities to check whether oil was the cause of mass death, local media reports said Monday. The fish were found Sunday floating on the surface of the water and collected in booms that had been deployed to contain oil that leaked from the BP spill in the Gulf of Mexico, the Times-Picayune reported. By our estimates there were thousands, and I'm talking about 5,000 to 15,000 dead fish, St Bernard Parish President Craig Taffaro was quoted as saying in a statement. He said crabs, sting rays, eel, drum, speckled trout and red fish were among the species that turned up dead. Taffaro said there was some recoverable oil in the area, and officials from the state's wildlife and fisheries division were sampling the water. But he added, We don't want to jump to any conclusions because we've had some oxygen issues by the Bayou La Loutre Dam from time to time.
I like to eat fish, but I hate to clean fish. To look back at my childhood, cleaning fish in winter would top my most-hated-things to do. After not cooking for three weeks due to travel, I decided to grill some salted fish. The akule at downtown Costco looked like the right kind of fish, so I bought a pack of four. The label on the package said: Fresh ... wild ... akule . Ok, they were pretty fresh alright. In fact, they were BLOODY fresh, because they were not even cleaned! I was shocked, but there was only one way to go: forward. I have a pair of sharp scissors from Hangzhou, ZHANG Xiaoqiun brand, and it was good enough to, well, remove the whole fish head.
