Ed.》上发表了他们的研究成果——可以轻松分辨各种白葡萄酒的“化学舌头”。 葡萄酒，不仅仅是餐桌上的佳酿，更是现代人生活品味的象征。而品酒师们要凭借自己灵敏的舌头，为客人分辨劣酒与佳酿。然而，葡萄酒造假是高端红酒市场所面临的一个严重问题。史上最为著名的红酒诈骗事件莫过于Jefferson藏酒造假事件。1988年，美国亿万富翁Bill Koch购买了4瓶原美国总统Thomas Jefferson所拥有的1784年Lafite葡萄酒。2005年，这4瓶葡萄酒被送至波士顿博物馆时却被发现为假酒，酒瓶上杰斐逊总统名字的首字母被证实是使用现代电动工具雕刻形成。可见，如何方便的鉴别不同种类，特别是味道相似的葡萄酒依旧是个不小的挑战。 这里所说的“化学舌头”，其实就是两种电荷性不同的离子型聚对苯撑乙炔（PPE）及它们的复合物。 这里所说的“化学舌头”，是由两种电荷性不同的离子型聚对苯撑乙炔（PPE）及它们的复合物组成的荧光传感器阵列。 酒中的羧酸化合物可与PPE的阴阳离子复合物相互作用，改变其荧光特性，导致荧光增强或荧光淬灭。而不同的酸具有不同的结合常数，从而可以依据荧光强度的变化辨别不同类型的酸。通过PPE的荧光信号变化辨别葡萄酒中酸的种类与含量，从而实现了对不同类型葡萄酒的辨别。 通过在不同pH值下的设计结合，这条“化学舌头”的灵敏性一点也不逊色于专业品酒师。在对52种不同白葡萄酒进行鉴别的过程中，准确率达98%。 不过，由于红葡萄酒中存在的色素会使得荧光淬灭较为严重，这种传感器很难在红葡萄酒的鉴别中发挥作用。在未来的研究中，如何实现对红酒的辨别将会是一个新的挑战。 “化学舌头”挑战威士忌 威士忌就像中国的白酒一样，不同产地、发酵工艺、储藏条件、年份等因素会孕育出不同风味的威士忌。但不同威士忌之间化学成分又极为相似，通过一般的分析手段很难辨别。 最近，UweBunz教授课题组和荷兰格罗宁根大学Andreas Herrmann教授课题组的科学家们合作发明了一种“化学舌头”，它能根据原产国、品牌、调配方式、酿造时间和味道区分出33种不同威士忌，还可以鉴别真假。相关研究发表在Cell Press旗下化学综合类期刊《Chem》上。 他们设计了两类荧光探针，一种是化学合成的离子型聚合物荧光探针聚对亚芳基亚乙烯（Poly(p-aryleneethynylene)s，PAEs），另一种是基于绿色荧光蛋白（Green fluorescent protein，GFP）的探针。 不同分子式的酒酿分子和荧光试剂结合后，会强行改变荧光试剂的化学结构，而使新的化学物质因结构不同而产生不同的颜色。研究者从二十多种修饰过的离子聚合物中筛选出三种响应最佳的高分子荧光探针，于是每种威士忌有三个荧光变化的特征值。 最后读出的荧光信号与威士忌的酒龄、麦芽状态（单一或混合）、原产地、口味有关。这相当于是给不同原产国家、品牌、聚合状态、年份和口感的分子们，贴上不同颜色的“标签”一样。综合这两种荧光探针的结果可以使准确率提高到近乎100%。 理论上，该方法同样适用于饮料，以及生物样本，红酒、白酒、啤酒、果汁、药物……只要是复杂混合物都可以用它鉴别真伪。以往，化学家也设计了许多种鉴别酒的方法，但是较为复杂，使用的人还需要有较为深入的背景知识。而荧光检测方法十分简单，是一项很有应用前景的发明。 以后可能还会搞成试纸条也说不定，想测的时候随时随地可测：只需要把荧光染料呈现出的颜色和标准色谱作对比，就可以推断出酒酿分子的品种，甚至判断真假。改工作被来自马萨诸塞大学UMass的Vincent M.
