Saturday is my day off (cooking), and I was busy with many little things until 6:30 pm. However, dinner cannot be skipped in this household.
I do have some fresh eggs, and some very fresh Japanese cucumbers (vs. fat American ones with thick skin). I thought that I would take a risk to cook something I never did for my son: stir-fry cucumber with eggs. I liked it, and more importantly my son liked it, too.
I learned to cook this dish in Beijing in summer 1985 (?), while I visited Prof. Zhu at the IAP. There were hardly any meats available at the shops, so eggs were as good as life could offer during the time. I wish to share this little story with Mrs. Zhu, but I am afraid that she would feel sad since Prof. Zhu is no longer with us...
